Spinach and Lentil Curry

Instructions

Step 1
Preheat your oven to 200 degrees. Add the butternut to a baking tray with some olive oil, salt and pepper and bake in the oven for 25 minutes.
Step 2
Add the olive oil, onion and garlic to a saucepan and cook for 5 minutes until fragrant. Add half of the spinach and coconut milk to a blender and blitz until smooth.
Step 3
Once the onion has softened add the ginger, mustard seeds, ground coriander, garam masala and ground cumin along with the roasted butternut.
Step 4
Leave the spices to cook for a minute then add the blended spinach coconut milk, lentils, remaining spinach, salt and pepper.
Step 5
Cover and leave to simmer for 10-15 minutes.
