Ingredients
6 servings
1 cupraw cashews
soaked overnight
¾ cupwater
1 Tbspnutritional yeast
1 Tbspwhite miso
1 Tbspwhite wine
1 tspmaple syrup
2 tspcornstarch
1 tsponion powder
1 tspgarlic powder
⅛ tspturmeric
12 ouncespenne pasta
1 cuponion
finely chopped
3garlic cloves
1 Tbspgrated ginger
1 Tbspgaram masala
1 tspturmeric
1 tspchili powder
½ tspcumin
can crushed tomatoes
1 Tbspmaple syrup
1 x 14 ouncecan lite coconut milk
¼ cupwater
Instructions
Step 1
Drain the cashews from the soaking water and transfer to a high-speed blender. Add all the other Cheesy Sauce .
Step 2
Blend on high speed until smooth.
Step 3
Transfer the Cheesy Sauce to a small bowl and set aside.
Step 4
Preheat the oven to 400 degrees fahrenheit.
Step 5
Cook the penne pasta according to the package .
Step 6
While the pasta is cooking, heat a large skillet. Once hot, add the onion, garlic and grated ginger and saute for about 3-4 minutes. You may need to add a teaspoon or two of water to prevent sticking.
Step 7
Stir in the garam masala, turmeric, chili powder, and cumin and cook for 1 minute. Pour in the crushed tomatoes, maple syrup, coconut milk, and water and give it a good stir. Simmer for 7-8 minutes.
Step 8
Once the pasta is done, drain and add it to the tomato mixture, stirring to coat the pasta with the sauce.
Step 9
Transfer the skillet to the oven and bake for 10 minutes.
Step 10
Remove the skillet from the oven and pour the Cheesy Sauce over the pasta, spreading evenly.
Step 11
Bake for another 15 minutes. Serve.

If you don’t have an ovenproof skillet, you can transfer the pasta to a casserole dish before baking.
