Step 1
Preheat your oven to 250° and line two baking sheets with parchment paper or silicone baking mats.

Step 2
Combine maple syrup, olive oil, pumpkin puree and vanilla in a small bowl and stir.

In a large mixing bowl add oats, nuts, pumpkin pie spice and salt together and toss to combine.

Step 4
Pour wet ingredients over your dry ingredients and mix until oats are fully coated.
Step 5
Spread granola onto your prepared baking sheets and make sure it’s a thin layer and the granola is spread out evenly.
Step 6
Bake for 1 hr and 15 minutes mixing the granola in the pan every 30 minutes.

After baking, spread granola onto cooling racks and allow to cool to crisp up before serving.
Step 8
Store in an airtight container for up to 3 weeks. This granola also freezes well for up to 3 months!
