Broccoli Cheddar Soup

A "healthier" version of broccoli cheddar soup that's both easy and quick to make - takes under 30 minutes! Note: this recipe can be made vegan. The recipe calls for chicken broth, milk, greek yogurt, and parmesan. Chicken broth can be subbed out for vegetable broth and the parmesan can be replaced with nutritional yeast (same quantities for each). The milk and greek yogurt are used as a substitute for butter and heavy cream to make the recipe healthier. A good vegan alternative for the above are soaked cashews (~1 cup) - head's up, this will add more fat content to the soup

Instructions

For prep:

Step 1
Dice the onion, finely chop garlic, grate the carrot, and roughly chop broccoli florets

For the soup:

Step 2
In a pot on medium-heat, add olive oil and onions. Sautee until onions are slightly browned. Add garlic and sautee for another 2-3 minutes.
Step 3
Add the broccoli florets and shredded carrots and sautee for 2-3 minutes.
Step 4
Add chicken broth and bring to high heat, until the mixture is boiling. Then, bring it to a simmer. Note: chicken broth can be subbed out for vegetable broth
Step 5
Meanwhile, in a blender, combine milk, Greek yogurt, paprika, turmeric, coriander, and grated parmesan. Note: if this base looks too watery, feel free to add more Greek yogurt.

Add base to soup mixture and bring to a slow boil for 4-5 minutes. Add salt to taste

Note: for extra flavor and if you have it on hand, you can add some shredded cheese (I usually do half the serving size on the packaging)
