Instructions
Step 1
In a pan- add olive oil and sausage links. Cook until golden brown on each side (it's ok if they're not fully cooked, they'll finish cooking in the pepper mixture). Set aside. Once cooled slice on an angle into bite-size pieces.
Step 2
In the same pan with sausage drippings- add bell peppers and onion. Cook until veggies start to soften. Add chicken broth a little at a time to help soften the veggies. After 5-10 minutes, add in minced garlic and seasonings. Stir and continue to cook for another 5 minutes. Add in your mushrooms and continue to cook on low. Continue adding chicken broth slowly to help create a slight sauce.
Step 3
While the veggies are cooking- prep the potatoes. In a bowl add olive oil, seasonings, and quartered potatoes, and mix well. Preheat the air fryer to 400F.
Step 4
Once veggies are all soft and slightly saucy, add in your sliced sausage and cook until sausages are completely cooked 10-15 minutes. Stir in apple cider vinegar.
Step 5
Now add your potatoes to preheated air fryer and cook for 10-15 minutes, stirring halfway through.
Step 6
To a bowl- add your cooked potatoes then top with your sausage and pepper mixture. Enjoy!
