Ingredients

1 lbchicken breasts
cut up
2 cupsfrozen shrimp
or fresh
1 cupfresh green beans
chopped, frozen are ok too
1can chopped tomatoes
1 cupfrozen peas
2garlic cloves
sliced
1green pepper
or red, or a bit of both, sliced longways
2 cupsrice
1/2 per person
4 cupswater
boiling, possibly more for when it cooks down
olive oil
1 pinchessaffron
2 tspssmoked paprika
salt
to taste
lemon wedges
optional
Instructions
Step 1
In a cast iron skillet, cook the chicken and garlic in olive oil until no longer pink, add the shrimp, water, rice, saffron, paprika, salt and pepper. Cook 15-20 minutes until rice is done. During that time, preheat oven to 350. Once rice is soft, add the tomatoes, green beans, pepper slices and green peas. Mix together, adjust the spices if you want to boost the flavor and stir and let the veggies soften for about 10 minutes. Arrange the veggies, if you like to give it a “design.” Bake covered for about 10-15 minutes. Check that your veggies have softened. It’s ready to serve!
Step 2
You can also add squid or oysters. The veggies can be increased or even add different ones. This dish is very versatile.
