Ingredients

2Huon Salmon Portions
Fresh, skin off
1 cupbrown rice
cooked
1 headbroccoli
small, cut into florets
0.5avocado
sliced
½ cupedamame
shelled
1carrot
cut into matchsticks
sesame seeds
to serve
2 Tbspsalt reduced soy sauce
1garlic clove
crushed
2 Tbspextra virgin olive oil
ginger
1 cm piece, finely grated
2 Tbspmirin
1 tsphoney
1 Tbspwater
1 tspcornstarch
Instructions
Step 1
1 Preheat oven to 180°C and line tray with baking paper. 2 In a small saucepan over medium heat combine soy sauce, garlic, olive oil, ginger, mirin and honey. While mixture is heating, whisk together in a separate bowl cornstarch and water. Add cornstarch mixture to soy sauce mixture and bring to a boil. Reduce heat and stir until you reach desired thickness. 3 Place salmon fillets and broccoli florets on a baking tray and spoon teriyaki sauce over the top. Transfer salmon to the oven and bake for 12-15 mins. 4 To assemble bowls, divide rice between bowls and top with salmon, broccoli, avocado, edamame and carrot. 5 Drizzle remaining teriyaki sauce over the bowls and top with sesame seeds.
