One-Pot-Lasagna (vegan, easy & quick)

This is no traditional lasagna, however a great alternative if you need an easy, tasty & nutritious weeknight dinner!

Ingredients

1onion
chopped
2cloves garlic
minced
½ teaspoondried thyme
½ teaspoondried oregano
1 teasoondried basil
100gground meat
plant - based
1 Tbspbalsamic vinegar
700gtomato passata
400mlveggie broth
salt
pepper
5lasagna noodles
broken down
baby spinach
optional
vegan cheese
optional, Garnish with
vegan cream cheese
optional
fresh basil
Instructions
Step 1
Fry onion and garlic for a few minutes, then add spices and the plant-based meat alternative and fry for another 5 minutes. Then add the rest of the ingredients and let it simmer for 6-7 minutes.
Step 2
Add lasagna noodles and let simmer for another 15-20 min until noodles are soft.
Step 3
Lastly stir in baby spinach (optional) and
vegan cheese (optional). Garnish with
vegan cream cheese (optional) and fresh basil.
