Step 1
In a pot, bring about a litre of water to boiling with some salt before adding the pasta.

Heat some oil in a pan and add the carrots, aubergine, zucchini, pepper and onion in this order leaving 2-3 minutes between each. Chop each in medium to small cubes.
Appr. between the pepper and onion, add the pasta to the cooking and cook until done.

Step 3
Add the can of tomatoes, salt, pepper, chopped basil and thyme and leave for about 5 minutes on medium heat until the vegetables have the desired consistency.

Step 4
Pour off the water from the pasta, once ready. Add the pasta and sauce to a plate or bowl and garnish with some fresh basil. Enjoy!
