Instructions

Step 1
Cut chicken and fry in oil until cooked.
Step 2
In a separate bowl, combine broth, soy sauce and corn starch.
Step 3
Remove chicken from pan. Add mushrooms and sauté till brown. Remove from pan.
Step 4
Add yellow onion and bell pepper, sauté till soft.
Step 5
Add chicken and mushrooms back into pan. Add peas and carrots.
Step 6
Add broth mixture to pan, stir often, until liquid thickens slightly.
Step 7
Add cashews and green onion. Stir to combine and immediately serve.
