Ingredients

20 leavesSpinach
washed and finely chopped

1 stalkcurry leaves
2 Tbspcooking oil
3cloves garlic
1 tspblack mustard seeds
½ tspcumin seeds
1 tspred chilli powder
½ tsphaldi
1 tspdhaniya powder
corriander powder
½ tspjeera powder
salt
as per taste

1 tspsambar powder

Instructions
Step 1

In a pan on a low flame, add oil and mustard seeds, cumin seeds, and hing.
Step 2

Once the mustard seeds begin to crackle, add chopped garlic. Fry well till the garlic turns golden brown.
Step 3

Finely chop onion, tomato, and green chillies, and take a stalk of curry leaves.
Step 4

Add the chopped vegetables to the pan and cook till the onions turn slightly translucent.
Step 5

Add chopped spinach to the pan.
Step 6

Add all the spices.
Step 7

Once the spinach has cooked slightly and shrunk, add salt as per taste and (optional) sugar.
NOTE: Don't add salt before the spinach shrinks because you may overestimate how much salt is needed for the dish.
Step 8

Cook arhar dal on a low flame for 5 whistles in a pressure cooker.
Step 9

Add the cooked and mashed arhar dal to the spinach.
Step 10

Add required amount of water to get the desired consistency.
Step 11

Place a lid on the pan, and cook for about 5 mins on a low flame. Serve hot with boiled rice.
