4boneless pork loin chops
3/4' thick

¼ teaspooncoarsely ground black pepper

½ teaspoonsalt

4onions
medium, cut into 1 inch diagonal slices

8 ouncessnow peas
strings removed

1 tablespoonfresh ginger
minced

3garlic cloves
crushed

¼ cupcreamy peanut butter

1 tablespoonsugar

1 tablespoonsoy sauce

⅓ teaspooncayenne pepper

¾ cupwater
Instructions
Step 1
1. Pat pork chops dry with paper towels. Sprinkle pork chops with pepper and teaspoon salt. 2. Heat nonstick 12-inch skillet over medium-high heat until hot. Add pork chops and cook 4 minutes; turn pork over and cook 3 to 4 minutes longer, until lightly browned on the outside and still slightly pink on the inside. Transfer pork to platter; cover with foil to keep warm. 3. To same skillet, add green onions, snow peas, and remaining tea- spoon salt, and cook over medium heat 4 minutes, stirring frequently. Stir in ginger and garlic; cook 1 minute. Return pork to skillet. 4. Meanwhile, in small bowl, stir peanut butter, sugar, soy sauce, ground red pepper, and water until blended. 5. Pour peanut-butter mixture into same skillet; heat to boiling over medium-high heat. Reduce heat to low; simmer 1 minute.
