Loaded Breakfast Omelette

So today, my fridge really needed to be CLEANED out! I had a lot of leftover pieces of veggies as well as various deli meats from the grinder sandwiches I’ve been making. In this day and time (or any day for that matter), I REFUSE to waste food so guess what? I ended up here with this omelette! The best part about an omelette is that you can put ANYTHING in it and customize it to your liking. This is exactly how I want my omelette EVERYTIME.. The only change I would make is to add Mexican hot sauce instead of Texas Pete!! Haha! How do you like your omelette? Let me know in the comments!

Instructions

Step 1
Crack and beat your eggs. Add salt to taste, cream, and set aside.

Prepare all of your veggies and meats by dicing them and setting them aside until needed.

In a medium non-stick skillet over medium heat, add olive oil spray and a tsp of butter to the pan. Once the skillet is hot, add in all of your veggies and meats except the bacon. Saute for 1-2 minutes. Season with cajun seasoning if preferred.

Step 4
After sauteing the ingredients, reduce the heat to medium-low and slowly add in your beaten eggs. Gently shake the skillet to settle the eggs underneath the cooked veggies. Cook for 3 minutes.

To ensure the inside is cooked, carefully lift up the edges of the egg to allow any runny parts to be cooked underneath as demonstrated in the video. Add the bacon bits and cheese combinations on top right before folding.

Step 6
Fold the right side into the center and repeat with the other side. Flip once onto the opposite side, plate, garnish, and SERVE!
