Summer Salad w/ Honey lemon dressing

This is one of my favorite spring/summer salads. Sweet refreshing homemade dressing, fresh fruit, salty cheese and candied walnuts. I brought this salad to a friends outdoor birthday spa party. It was a hit!

Step 1
Walnuts -melt butter in a small pan on a low flame, add the walnuts to coat in the butter then add the sugar…once everything is coated set to the side to let cool. Feel free to add more sugar or butter. I like them extra sweet and coated
Step 2
Thinly slice the watermelon radishes. A mandolin works best. Drain the mandarin oranges and reserve 1/4 cup of the juice for the dressing
Step 3
Dressing - juice of 1 lemon, mandarin orange juice (should be about 1/4 cup of each. Lemon zest, honey, mustard, pinch of salt, cayenne pepper. Add olive oil to your liking and diced shallots
Step 4
Dice avocados and toss with some lemon juice, add the salad to a bowl and toss with 1/2 the ingredients. Then top with the remaining ingredients. **You can place the dressing at the bottom of the bowl and toss when you’re ready to serve or prepare in a mason jar and pour on top which is perfect for traveling.
