Beet & Radicchio Salad with Seared Halloumi

Instructions

For the Dressing:

Step 1
-Place all ingredients in a container with a tight lid and shake vigorously for 30 seconds to combine everything. Reserve for later. Always shake before using.

For the Salad:

Step 2
-Wrap the red beets in tin foil and bake at 350* for roughly 1 hour, or until they are soft but not mushy. -Allow the beets to cool in the foil for a bit, then remove foil and peel using paper towels. Dice into bite sized chunks and toss with the dressing while they are still slightly warm. Set aside while you assemble the rest of the salad. -Chop the radicchio into large bite sized chunks and place into a large bowl. Top with the pistachios, torn basil, pickled onions and room temperature beets.
