200gmushrooms
cremini, shiitake, porcini, Trim stems and thinly slice
oyster
chanterelle
1 Tbspcoconut oil
salt
pepper
1shallot
medium, thinly sliced
2 cupskale
85gfresh goat cheese
crumbed
Dressing:
Instructions
Step 1
Fry your mushrooms in a little coconut oil for roughly 10minutes on high until the mushrooms are browned.
Step 2
Lower the heat and stir in shallots. Stir and cook until translucent.
Step 3
Season with salt and pepper.
Step 4
Add coconut aminos and cook until mostly evaporated.
Step 5
Remove from heat and keep warm.
Step 6
Create your dressing in a bottle and shake well.
Step 7
In a bowl, combine the Kale and dressing, then add the mushrooms and toss again.
Step 8
Top with goat cheese.
Step 9
Extra dressing can be kept in the fridge for later use.
