Instructions

Step 1
Heat the oven to 190C |170C fan | gas mark 5. You can cook this in a pan or oven-proof dish or a 20cm sandwich cake tin (if your cake tin has a loose bottom you will need to line it with baking paper).

Beat the eggs in a large bowl then add the broad beans, courgette, cherry tomatoes, spinach, cheddar cheese, black pepper and oregano. Tip the content of the bowl into the baking dish.

Step 3
Bake for 40 minutes in the oven or until cooked all the way through. Your frittata will rise during cooking.
Step 4
Serve hot or cold. The frittata will keep for 2-3 days in an airtight container in the fridge.
