Smoked Cabbage & Potato Salad

Instructions

Step 1
Heat smoker to 275F with a light wood like Apple.

Blanch Veggies

Step 2
Bring water to rolling boil. Cut cabbage in half vertically, so stem holds leaves together. Peel and dice potatoes into 1/4 inch cubes.
Step 3
Blanch potatoes and cabbage for five minutes. Add peas, blanch one minute more. Strain when potatoes are tender, run under cold water.

Smoke Cabbage

Step 4
Brush cabbage one side with olive oil and season with salt. Wait 10 min to soak in, repeat on other side. Add to smoker flat side down.
Step 5
Flip after 30 min. Remove after 1 hour.

Pickle Onion

Step 6
Mix sugar, salt and crushed red pepper into white wine vinegar in a medium sized mixing bowl. Stir until sugar/salt dissolves. Add bay leaf.
Step 7
Use mandolin to thinly slice onion into rounds. Slice across the round once to create small onion strips. Add to pickling solution, stir every 15 minutes to evenly coat.

Put everything together

Step 8
Once cooked, remove cabbage from smoker. Remove cores. Roughly chop into 1/2 inch pieces. Add to mixing bowl.
Step 9
Strain red onion from pickling solution. Add to mixing bowl.
Step 10
Rinse arugula and add to mixing bowl.
Step 11
Mix well, season with olive oil/salt/pepper.
