Ingredients

515gchickpeas
cooked
½ Tbspred chili powder
1 tspcumin
1 tspgarlic paste
1 tspginger paste
¼ tspkosher salt
Sauce
65gred onion
diced
1 tspginger
fresh chopped
½ tspred chili powder
100gchopped tomatoes
50graw cashews
1 ½ cupwater
1 tspgarlic paste
1 tspginger paste
1 tspneutral oil
1 Tbspbutter
or dairy free butter
2 tspgaram masala
200mlcoconut milk
or vegan cream of choice

Instructions
Step 1
mix together seasoning mix combine with chickpeas allow to marinate for at least 30 minutes.
Step 2
In a large pan add neutral oil, butter, red onion, chopped fresh ginger cook until tender.
Step 3
add in 1/2 tbsp red chili powder, 2 tsp garam masala, salt and stir for 30 seconds.
Step 4
Add 100 g chopped tomatoes, 50 g raw cashews, water, garlic, and ginger paste, and cover. Cook on medium-low for 12 minutes.
Step 5
Transfer from pot to blender or use a stick blender, blend till smooth
Step 6
Strain and return the mixture to the pan. You can skip this step if you prefer
Step 7
Add butter and 200 ml coconut milk or vegan cream of choice.
Step 8
Bring the pot to medium heat cooking for 10 minutes.
Step 9
Garnish with fenugreek or parsley. Serve over rice with naan or roti and enjoy.
