Baked Shrimp & Feta

My family has been making this dish for over 10 yrs. Similar to the viral “baked feta pasta” but soo much better (IMHO). Very adaptable to what you have on hand & always comes out a winner!

Ingredients

4 servings

2 tbs EVOO
2 Tbsevoo
7 oz feta, block
7 ozfeta
block
10-12 oz shrimp, raw & de thawed
10 ozshrimp
raw & de thawed
1 onion sliced

3 cloves garlic, chopped

14.5 oztomatoes
with juice - canned or fresh
½ cupolives

2 Tbsfresh parsley
or basil 1 tbs
2 tsp dry oregano
2 tspdry oregano
1/2 tsp pepper
½ tsppepper
Salt, as needed

Optional:

Instructions

Step 1
Sauté onions & garlic for 3-4 min (optional)
Step 2
Drizzle EVOO in oven safe dish & add everything in - feta in the middle
Step 3
Bake @ 375 for 20-25 min or until shrimp is cooked
Step 4
Mix everything together & enjoy with bread, pasta or on its own
