One Pan Burrata Pesto Gnocchi
One pan gnocchi with burst tomatoes, burrata and pesto. So easy & delicious!

Instructions
Step 1
Start by cooking gnocchi. Boil a pot of salted water, add the gnocchi, boil until they gnocchi float to the top. Drain and set a side in a bowl and a drizzle of olive oil to prevent them from sticking.


Step 2
In a large pan on the stovetop add 1 tablespoon oil of choice. (I used olive oil). Add the onions to the heated oil and sauté for 4-6 minutes until the onions start to soften. Mix in the garlic and cook for 2-3 more minutes, add the cherry tomatoes. Let the cherry tomatoes cook for several minutes until they start to burst and wilt.


Step 3
Mix in the gnocchi and season with salt and pepper. Let cook until heated through.


Step 4
Remove from heat and add dollops of burrata on top then drizzle some pesto on top.
