Shrimp and pork dumplings in a spicy chili sauce

This was one of the first recipes I shared, its shrimp and pork dumplings with a spicy chili sauce. It’s so good, freezes well and looks harder to make than it is!

Instructions

Step 1
Mince/finely chop shrimp and add it to ground pork. I keep my seasoning minimal since there is so much flavor in the sauce.
Step 2
Season with soy sauce, white pepper and green onions and corn starch. You can add grated ginger/garlic as well if you’d like. Mix all the ingredients together and to taste the filling, cook one teaspoon in the microwave for about 30-45 seconds and adjust the seasonings if needed.
Step 3
Tip: I’m using wonton wrappers and I keep a wet paper towel over it to prevent it from drying while I’m wrapping the dumplings.
Step 4
Add one tablespoon of filling to the wrapper and dab some water along the edges of the wrapper before folding. One way to fold this is to a triangle, dab the outside corners with water and fold inwards. 2nd way is to line up the top and bottom corners then fold and pinch in the two sides inwards and it will look like a money purse. 3rd, fold one corner-upwards, pinch the 2 sides together towards the center and you get this cute little dumping! Honestly, there isn’t a wrong way as long as it’s sealed.
Step 5
In a small bowl, add chili oil, soy sauce, sweet or regular black vinegar, grated garlic and green onions together. Mix well
Step 6
Boil the dumplings for 3-4 minutes (or until cooked thoroughly) and they’ll float to the top. Transfer to a bowl and add a generous amount of the sauce and cilantro.
