Spiced Roasted Chicken Masala
This recipe is delicious and simple in a manner you process a bunch of aromatic spices and rub it onto raed chicken thighs, then roast them until they're juicy and fragrant. I pair this with butter rice and quinoa for a pretty but packet with flavor. Here, the bright and zesty flavors of lemon, ginger and garlic contrast beautifully with the rich, tender dark meat of the chicken. By the way, plenty of sliced cucumber alongside. Enjoy.

Ingredients

8chicken thighs and drumstick
with skin, pierced all over with a small knife
7 clovesgarlic
peeled
2 inchfresh ginger root
piece, peeled
1jalapeño pepper
small, seeded
1whole lemon
Juice and zest of, small
2 tablespoonstomato paste
1 teaspoonsalt
or to taste
1 teaspooncumin powder
1 teaspooncoriander seeds
or ground coriander
Instructions
Step 1
1. Heat oven to 400 degrees. Put chicken thighs in a bowl. Mince garlic, ginger and pepper. Toss with all remaining ingredients or put in a small food processor, and grind to a paste. (It is O.K. if the coriander seeds are not fully pulverized. They will add a little crunch.)
Step 2
2. Rub mixture thoroughly into chicken. At this point, you can cover, and refrigerate for up to a day.
Step 3
3. Put thighs, skin side up, in a roasting pan. Roast for 45 minutes or until done
