Instructions

Step 1
In a large bowl combine flour, baking soda, salt and monk fruit.
Step 2
Stir in oat milk, EVOO (or ghee) and vanilla.
Step 3
Continue stirring until you arrive at a cookie dough texture. Add 1-2 tbsp extra milk of choice until the right consistency is achieved.
Step 4
Refrigerate at least 2 hours or freeze until the dough is cold (do not fully freeze!)

ONCE DOUGH IS CHILLDED

Preheat oven to 325 F.

Grease baking tray with ghee or AIP-friendly cooking spray (you can also use parchment paper).
Step 7
Form 1.5" dough balls.
Step 8
Bake 10 minutes on the center rack or until bottoms are slightly brown. Do not overcook--they’ll look underdone when you remove them.
Step 9
Cool on the tray 10 minutes.
