Peanut Butter Banana Bake

Step 1
Preheat the oven to 350F. Line a 9x5 loaf pan with parchment paper

Mash the ripe bananas with a fork (or blend them and add them to the bowl). Mix in the peanut butter, oats, baking powder, salt, and vanilla until combined. Fold in the chocolate chips

Step 3
Transfer the mixture into the pan, and top with your remaining chocolate. Bake for 25 minutes, or until a toothpick comes out almost clean
Step 4
Take out of the pan and place on a cooling rack in the fridge for at least 1 hour before slicing
Step 5
Or bake as mini muffins, 15 minutes at 350F. Makes 24
