Instructions

Step 1
Heat the oil in a frying pan/skillet and fry the sausage meats until browned, before removing and reserving
Step 2
Add as much oil as necessary to fry off the onion, followed by garlic
Step 3
Add the carrots, tomatoes, rosemary and bay leaf, and cook for 5 minutes
Step 4
Deglaze the pan with wine, add the stock and sausage, and cook for 20 minutes until thickened
Step 5
Remove from the heat, and add the mascarpone and lemon
Step 6
Season to taste and add the pasta and parmigiano reggiano
