Step 1
Boil 15 manicotti Pasta shells for about 2 min. Just to slightly soften them. I mix 1 pound of ground pork, 1 tablespoon of cajun seasoning, 4-6 ounces of jalapeño cream cheese and 1 cup of shredded pepper Jack cheese together then stuff them. After I bacon wrap them, put your favorite rib rub all around. Then smoke at 250 until desired. We like crunchy bacon so I smoke them a little longer.
