Here’s a simple high protein, creamy, chicken alfredo recipe that also pairs perfectly with broccoli or the veggie of your choice.

Step 1
1. Cut two sheets of equally sized parchment paper. Place one down on a cutting board. Place chicken on top of parchment paper then place other piece over chicken. Use either a meat tenderizer or a rolling pin to tenderize meat.

2. Coat chicken with salt and pepper. Heat a large skillet or sauté pan on medium heat. Lightly drizzle pan with oil. Add chicken and cover. Cook until chicken is no longer pink in the middle.

3. Take cooked chicken from the pan and add to a bowl. Shred.

4. Fill the pan with water and bring to a boil. Add pasta and bring water down to to soft boil.
Step 5
5. While pasta is cooking, add cottage cheese, shredded parmesan, garlic paste and about 1/2 a cup of the pasta water to a blender and blend until smooth.
Step 6
6. Drain pasta. Add back to pan with the cheese sauce and mix well. Then add shredded chicken. Add salt, pepper, paprika, and cumin to taste.
Step 7
7. Add broccoli or other cooked veggie if desired.
