Instructions

Step 1
Cook the pasta according to the pack instructions. With 2 minutes to go, add the peas to the pan.
Step 2
Meanwhile, heat the oil in a frying pan on a medium heat. Briefly fry the garlic then add the mushrooms and cook for 5 minutes or so, until softened.
Step 3
Drain the pasta and peas, reserving a scoop of the cooking water, and add to the mushroom pan with the heat turned down low.
Step 4
Mix in the spinach, hummus, lemon juice, seasoning and a little of the pasta water (as needed) until combined and the spinach has wilted. Serve immediately.
