Mushroom and Bok Choy Soba Noodles, Healthy!

Introducing my plant based and healthy mushroom, Bok Choy and crispy tofu Soba Noodles! Super yummy with any side protein or by itself! Good for lunch or dinner with plenty of leftovers! Enjoy!

Ingredients
4 servings
2 TbspSoy Sauce
or Tamarind
2 Tbsptomato sauce
3 Tbspmaple syrup
1 Tbspsesame seeds
½ Tbspsesame oil
4 TbspGreen Onion
Chopped
2 Tbspginger
minced
4garlic cloves
minced
1 CupMushrooms
any, shiitake and oyster preferably
2Baby Bok Choy
Whole, pulled apart
1 HandfulKale
chopped
1 handfulWhole Wheat Soba Noodles
0.5 blockTufu
cubed
salt
pepper

3 Tbspolive oil
Instructions
Step 1
1. Wash your veggies and mince the garlic, ginger and green onion.
2. Set a deep pan to medium and add the olive oil. Add in your washed Bok Choy and cover with a lid. Leave to steam for 10 minutes stirring occasionally.
3. Make a hole in the middle of the cooked Bok Choy and add in your mushroom. Cover and cook for another 5 minutes.
4. Add in the ginger and let that cook alone for a minute. Then add the garlic. Followed by the onion. (Adding these in one by one allows the flavor of each to come out instead of cooking together).
5. Pour in the soy sauce or tamarind. Followed by the tomato sauce and the maple syrup.
6. Stir all the ingredients together and turn the heat down to low for a light simmer. (If you prefer your noodles more saucy double the soy sauce, tomato sauce and maple syrup)
7. Next cook your noodles in a separate pot. About 7 minutes on boiling high. (Don’t forget to add salt to the stock pit before adding the noodles).
8. Drain the cooked noodles and add into your sauce pan. Give a good mix and then sprinkle in more green onion and the sesame seeds.
9. Ready to serve!
