Spicy Salmon Crispy Rice Waffle Sandwich

We love anything crispy rice and just had to make the Sushi Crispy Rice Waffle Sandwich from Erewhon, but our own version with a spicy salmon and avocado filling. We're totally hooked, it's freaking delicious!! Best part is, there's zero oil spatter, crispy rice mess to clean up at the end!

Ingredients

spicy salmon
4 ouncessalmon
sashimi grade, finely diced
1 ½ tablespoonsKewpie
or American style mayonnaise
2 ½ teaspoonssriracha
1 teaspoonsoy sauce
1 teaspoonsesame seeds
½ teaspoonsesame oil
1green onion
thinly sliced

Instructions
Step 1
1. Place all spicy salmon ingredients into a mixing bowl and gently stir together until evenly combined. Set aside.
Step 2
2. Preheat waffle iron to the highest setting.
Step 3
3. Lightly spray waffle iron with cooking spray.
Step 4
4. Evenly spread rice into waffle iron and press for 10 minutes.
Step 5
5. Remove crispy waffle rice from waffle iron and cut in half (creating two half circles).
Step 6
6. Spread mashed avocado over one of the waffle halves and sprinkle with 1 1/2 teaspoons furikake.
Step 7
7. Top evenly with spicy salmon mixture.
Step 8
8. Sprinkle salmon mixture with remaining furikake and sandwich together with remaining waffle half. Serve immediately.
