Ingredients

¼ cupapple cider vinegar
2 tablespoonsfresh lime juice
1 tablespoonhoney
1 teaspoonground cumin
⅓ cupcanola oil
Kosher salt
black pepper
freshly cracked
0.5mango
small, ripe, peeled and diced into 1/4-inch pieces
0.5yellow bell pepper
cut into small dice
1 x 14.5 ouncecan black beans
drained and rinsed
1jalapeno
small, seeds and ribs removed, minced
1red onion
small, cut into small dice
¼ cupfresh cilantro leaves
chopped
Instructions
Step 1
In a small mixing bowl, combine the vinegar, lime juice, honey and cumin. Slowly whisk in the oil until incorporated. Season with salt and pepper.
Step 2
Mix the mango, pepper, beans, jalapeno and onion together in a large bowl.
Step 3
Drizzle the vinaigrette over the ingredients and toss to combine.
Step 4
Season the salad with salt and pepper
Step 5
Garnish with the cilantro.
