Instructions

Step 1
Preheat oven to 400 F.
Step 2
Line baking sheet with parchment paper or coat with olive oil Slice sweet potatoes into even thickness ( approx 1/2 in) discs and lay out on baking pan.
Step 3
Sprinkle with sea salt
Step 4
Bake for 20 minutes or until easily pierced with a fork.
Step 5
Reserve 2 sweet potato slices and assemble your favorite sandwich protein, spread some mustard, add your greens and tomato slice close up with the other half of sweet potato “bread”
