Zucchini boats

Need a low carb dinner idea?! This one is a fave!! Nutrient dense and delicious.. zucchini boats! A favorite staple around here! Super easy to whip up this 5 ingredient meal and it makes for great leftovers too!

Instructions

Step 1
1. Cook ground meat, season with S+P and garlic powder ⁣
Step 2
2. Mix in 2 cups of pasta sauce with the meat and let simmer⁣
Step 3
3. Preheat oven to 400 & grease a 9X13 baking dish ⁣
Step 4
4. De-stem and cut zucchinis in half length wise - carve out guts ⁣
Step 5
5. Mix in 2 cups of shredded mozzarella and 1/2 cup parmesan to meat and sauce mixture, stir until melted ⁣
Step 6
6. Spoon mixture into zucchini boats, sprinkle remaining cheeses on top ⁣
Step 7
7. Bake uncovered for 25 min (then switch to broil for a few minutes to brown cheese!)⁣
