Instructions

Step 1
Preheat oven to 375F
Step 2
In a lg pot place sweet potatoes in the cold water and bring to a boil.
Step 3
Boil until fork-tender (about 20 min).
Step 4
Drain water.
Step 5
Add 2 tbsp ghee and the coconut milk - away from the heat.
Step 6
Mash potatoes with masher, immersion blender or food processor.
Step 7
Transfer to bowl and set aside.
Step 8
Return the same pot to stove on medium heat and melt the remaining 2 tbsp ghee.
Step 9
Add onions, celery and carrots and cook, stirring for 5 min.
Step 10
Add ground meat and garlic. Cook stirring often until the meat is browned (7-10 min).
Step 11
Season with salt, pepper, thyme and oregano.
Step 12
Remove from heat and let cool for 5 min.
Step 13
Spoon the meat and vegetable mixture evenly over the bottom of a 9x12 glass pan.
Step 14
Carefully spread the mashed sweet potatoes over the top of the meat and veggie mixture.
Step 15
Roast in oven for 30 min., letting top brown slightly.
