Vegan Cauliflower Alfredo

Ingredients
3 servings
Cauliflower “cheese“ sauce
0.5 headcauliflower
medium
⅔ cupcashews
1 Tbspolive oil
1onion
medium
2garlic cloves
2 tspmiso paste
optional
4 Tbspnutritional yeast
0.5lemon juiced
salt
pepper
½ cupplant milk
Optional topping
Instructions
Step 1
Cook the cauliflower for about 15-20 minutes until completely tender. If your blender isn’t the strongest, also cook the cashews.
Step 2
In a pan sauté onion and garlic in a little olive oil.
Step 3
Blend all ingredients for the sauce.
Step 4
Cook pasta until al dente. Add to a pan along with the sauce and a splash of pasta water. Stir to combine. Optionally add some vegan parmesan.
Step 5
For the topping sauté the finely chopped cauliflower leaves, add old bread or breadcrumbs and sauté until crispy.
