White Wine & Cream Version
Instructions
Base sauce
Step 1
In saucepan, melt butter

Step 2
Add flour and wisk to form a roux

Step 3
Heat and stir roux until it turns golden brown (3-4 min.)
Step 4
Slowly add warmed broth to roux, whisk continuously
Step 5
Simmer for ~20 min. To reduce by 1/3. Add salt and pepper to taste
White Wine Version
Step 6
In saucepan, bring wone to low simmer until it reduces by half
Step 7
Add velouté sauce to wine and simmer for 5 minutes. Add cream and bring to simmer
Step 8
Add lemon jusice and salt & pepper as needed
Serving
Step 9
Serve over chicken, fish, or roasted vegetables.
