Ingredients
4 servings
200ggreen beans
200gsugar snap peas
2 x 185gtuna in spring water
or brine, drained and flaked
2 x 400gcans mixed beans
drained and rinsed
1red onion
finely chopped
1red chilli
deseeded and roughly chopped
2tomatoes
roughly chopped
1little gem lettuce
For the Dressing
Instructions
Step 1
Bring a large pan of lightly salted water to the boil and add the green beans and sugar snap peas. Bring back to the boil then drain and refresh under cold running water. Drain again and put the green beans and sugar snap peas into a mixing bowl.
Step 2
Add the tuna, canned beans, onion, chilli and tomatoes to the mixing bowl and stir well.
Step 3
Arrange the lettuce leaves in a serving dish and tip the tuna and bean mix over the top.
Step 4
Mix all the dressing ingredients in a bowl, season to taste and pour over the tuna mixture. Toss thoroughly and scatter over the lemon zest to serve.
