For the Salad
Instructions
Step 1
Add all of the dressing ingredients in a dressing bottle or small jar.
Step 2
Shake until well blended.
Step 3
In a mixing bowl, add the cucumbers, bell peppers, shallots, tuna, and lentils and stir gently until ingredients are well combined.
Step 4
Add the dressing to the mixing bowl, and gently combine until the dressing coats all of the lentil-tuna mixture.
Step 5
Gently tear parts of the arugula and kale, adding to the lentil-tuna mixture. Mix in until just combined. Serve.
