"Meaty" Vegan Spaghetti Sauce with Olives and Mushrooms

Ingredients

8 Tbspolive oil

6onions
medium

3celery stalks

24 ozfresh brown mushrooms
2 x 6 ozcans pitted black olives

5pickled cherry peppers
with some juice

9 x 28 ozcans crushed tomatoes

4 x 14.5 ozcans diced tomatoes

¼ cupgranulated garlic powder

2 Tbscrushed red pepper

3 Tbschipotle powder

6 TbspItalian seasoning herbs

6 Tbspsalt

4 Tbspmaple syrup
or honey, optional

2 tspmonosodium glutamate

Instructions
Step 1
Line three jellyroll pans with foil. Spray or brush a tbsp. of olive oil in each pan, then lay burger patties in a single layer. Brush or spray another tbsp. olive oil on the tops of the patties. Bake at 375 degrees for approximately 15-20 minutes, turning once halfway through. The patties should have a nice brown crust but not be dried out. Remove pans from oven and let cool. Lower oven temperature to 250 degrees.
Step 2
Pulse chop all the onions and celery in a food processor. Slice the olives and mushrooms. Chop the cherry peppers.
Step 3
Heat 2 tbsp. of olive oil in a very large stockpot and saute the chopped onions and celery. Mix in the cans of crushed and diced tomatoes, cherry peppers and juice, and all the spices. Salt and MSG are optional. Add the maple syrup (or honey, or sugar substitute like erythritol) if the tomatoes aren't sweet.
Step 4
Crumble the cooked burger patties by hand or pulse briefly in a food processor and mix well into the pot. Cook the sauce on medium heat on the stovetop until it reaches a simmer. Check and adjust seasoning if needed. Cover the pot put in the 250 deg. oven to cook for 2-2.5 hours, stirring occasionally. Check and adjust seasoning again if needed. For best flavor, turn the oven off and allow the sauce to sit for a few hours.
