Instructions
Step 1
In heavy saucepan over low heat, melt butter.
Step 2
Add flour; stir with wooden spoon or spatula 3 minutes or until roux is frothy and taste of raw flour is gone.

Gradually stir warm milk into roux.
Step 4
Turn up heat; stir until sauce is just at boiling point.
Step 5
Turn down heat; let simmer few minutes.
Step 6
Add pepper and hot pepper sauce.
Step 7
(Don't use pepper sauce too sparingly; it will help bring out the cheese taste.
Step 8
Stir 3/4 cheese into simmering sauce until melted; combine cheese sauce with macaroni; pour into greased 2-quart baking dish.
Step 9
Sprinkle with remaining cheese; bake in preheated 350 degree oven 30 minutes or until bubbly and light golden.
