Instructions
Step 1
Combine the ricotta, lemon juice, zest, and erythritol in a blender or food processor and blend until smooth. You could also stir by hand.
Step 2
Place a spoonful of ricotta mixture into the bottom of two cups, top each with a few strawberry slices, and sprinkle with almonds. Repeat the layers until your ingredients are used up.

Try different combinations of nuts and berries in this recipe, such as blueberries, raspberries, pecans, or walnuts.
