Step 1
Soak the bamboo skewers in water for a minimum of 5 minutes. Ideally this could be done prior to starting the preparation and left to soak between 10-30 minutes.
Step 2
Preheat the oven to 180 degrees celsius, on a fan forced setting.
Step 3
Place the potato on a baking tray and drizzle over the olive oil. Season with salt and pepper and place in the oven to cook for 25 minutes.
Step 4
In the meantime, combine the mince, cumin and garlic. Season with salt and pepper and then shape the mixture around the soaked skewers.
Step 5
In a griddle pan, add the skewers and cook for 2-3 minutes on each side, or until cooked through.
Step 6
Add the cucumber and tomato to a plate and drizzle over the olive oil.
Step 7
Once cooked, add the roast potatoes and the kofta skewers.
Step 8
Add a dollop of greek yoghurt to the plate and use this as a dipping sauce for the koftas.
