Curry Chicken with Rice

This is to make a Caribbean style chicken curry. This dish is perfect for all types of dinners. The perfect side dish would be plain rice or fried dumplings - Enjoy !!

Instructions

Step 1
1. put the chicken into a large bowl and season it with curry powder, salt, ginger paprika, black pepper, garlic powder and tumeric. cover and marinate in the fridge for minimum 2 hours or over night. 2. pour the oil into a large pot on medium heat (5). once hot add in the following: onion, scotch bonnet and garlic for around 5-7 minutes 3. add some more curry powder and ginger to the pot. stir and cook for 3 minutes. add a little water to make a nice creamy paste. 4. add the chicken to the pot and cook until brown. pour in the coconut milk and stir. add the potato, carrots and thyme. cover the pot and cook for 30-45 minutes until the chicken is cooked and the carrots and potatoes are soft. 5. serve with white rice or fried dumplings and enjoy!
