Instructions

Step 1
Add all the marinade ingredients to a food processor and blend until smooth.
Step 2
Wash the chicken in vinegar and rinse well in cold water, place in a bowl.
Step 3
Pour the marinade over the chicken, and ensure all the chicken is coated in the marinade. Cover the bowl and allow to marinate for at least two hours, best to leave overnight.
Step 4
Transfer the contents of the bowl into a casserole dish or pan, cover with a lid or foil and place into a preheated oven at 180 degrees for 30 minutes.
Step 5
In a small saucepan add in the olive oil and gently heat and add in the onion and ginger slices along with thyme, stir for a minute before adding in the remaining sauce ingredients, stirring frequently and simmer until the sauce slightly thickens then turn off the heat.
Step 6
Remove the chicken from the oven and turn the chicken pieces over before returning them to the oven for a further 15 minutes. Remove the chicken from the oven coat the pieces with the sauce then return to the oven without the lid or foil and cook for a further 15-20 minutes.
Step 7
Plate up, serve with rice and peas, lick your lips and enjoy.
