Instructions

Step 1
Preheat oven to 325 degrees F and grease a 3 qt baking dish (9x13"). Set aside.
Step 2
Bring a large pot of salted water to a boil. When boiling, add dried pasta and cook it according to package instructions. Drain and drizzle with a little bit of olive oil to keep from sticking.
Step 3
While water is coming up to a boil, start caramelising the onions in butter on low-medium heat. Once golden toss in chopped jalapeños and roasted garlic and mix everything together. Sprinkle in flour and cook for 1 minute. Slowly pour in milk and bring the mixture to a slight boil. Add in the grated cheese, cream cheese and spice mix and stir until completely melted and smooth.
Step 4
Save a cup of the pasta water and add the drained pasta to the sauce. Once everything is mixed slowly add in the pasta water and adjust the consistency (you want it to be much more saucier than regular Mac and cheese as we will be baking it in the oven)
Step 5
Pour the pasta mixture in a baking dish and a layer of grated Parmesan cheese and sliced jalapeños on top. Cover this with a lightly rolled puff pastry sheet and seal the edges. Cut a cross in the middle of the puff pastry and brush the sheet with olive oil.
Step 6
Bake the Mac and Cheese in the oven for 20-25 minutes or until the puff pastry is golden and flaky. Serve it hot, Enjoy! (You can even bake it in individual dishes or ramekins for easier serving)
