Freekeh is essentially wheat that has been harvested early, while the grains are still tender and green. The kernels are then parched, roasted, dried and rubbed. Freekeh soup is an Ancient Lebanese Soup and considered one of the most delicious recipes in winter because it gives us warmth when it is eaten while it is hot, and freekeh soup with chicken is saturated and nutritious. as for preparing it is very easy.

Instructions

Step 1
Separate the good freekeh kernels from the bad ones, then wash them well with water and put them in a colander, then we soak it in water for 2 to 3 hours.
Step 2
Put the chopped onions in the cooking pot with the vegetable oil and sauté until it becomes golden in color.
Step 3
Add the washed Freekeh kernels to the pot and continue stirring for 5 minutes.
Step 4
Add an amount of broth with bay leaf and cardamom to the pot and leave it on a high heat with stirring from time to time until it begins to boil.
Step 5
Reduce the heat to the lowest level after boiling, then leave it until it is fully cooked for about 30 minutes.
Step 6
Lift the soup pot from the heat, then add salt, pepper and a little lemon, then stir the soup well and pour it hot in the serving dishes and distribute it on the dining table next to the main course.
