Instructions
Step 1
Mix together the ingredients for the meatballs.
Step 2
Evenly divide the meat mixture into about 12 meatballs.
Step 3
Set a nonstick skillet on medium heat and once hot, lightly spray with oil. Add the meatballs and cover and cook for about 6 - 8 minutes, then remove from the skillet.
Step 4
Add the chopped onion and sauté with a pinch of sea salt and The Fit Cook Land herb seasoning.
Step 5
Reduce the heat to low-medium, then add the tomatoes and coconut milk. Slowly stir in the parmesan so it does not clump.
Step 6
Add the spinach and allow it to wilt before adding the meatballs back to the skillet. Let everything simmer for at least 2 - 3 minutes, then enjoy!
