Instructions

Preheat oven to 400 F

Cook and shred the chicken. Set aside
Step 3
Place the mushrooms, bell peppers and onions in a greased pan and sauté until tender, about three minutes. Remove from heat and let cool.
Step 4
Combine the Kodiak Cakes mix, olive oil and water together. Knead with hands until well combined and smooth. If too dry, add a little bit more water. Place on a baking sheet lined with parchment paper. Cut dough in half, then roll out into two thin circles.
Step 5
Combine the cooked chicken, ricotta cheese, mozzarella cheese and Italian seasoning. Add the veggies and stir until well combined. Split the mixture evenly between both pieces of dough. Fold one side of the dough over the mixture then roll and pinch the edges tight until sealed. Brush tops of the calzones with egg white.
Step 6
Bake for 10-12 minutes or until golden brown. Slice each calzone in half for one serving. Use two tablespoons of marinara sauce for dipping per serving.
