Grilled Goat Cheese Sandwich
This is my favorite way to make grilled cheese. The flavors work together beautifully. Brushing melted butter onto the bread creates the most beautiful crust, I will never use cold butter to make grilled cheese again.
Pairs beautifully with my roasted tomato soup.

Instructions
Step 1
Heat 2-3 tbsp of butter in skillet over medium heat. Add 1-2 tbsp chili flakes and stir continuously with silicone pastry brush for five minutes. Butter should be dark gold.


Step 2
Brush 1 side of each slice of bread. Place 1 slice of bread, butter side down, on skillet. top with both cheeses and drizzle with 1-2 tbsp of honey. Place second slice of bread on top with butter side up.






Step 3
Cook in skillet over medium heat for 3-5 minutes per side. Cover with side white cooking to help cheese melt.
